Crazy Lizard Meat Recipe
Crazy meat is one of those foods with a taste of childhood and full of affectionate memory. Today's post will bring you step-by-step photos of this classic flavorful pan lizard dish with cumin, chili, wine and more.
The main tip is to plan: this is a long preparation recipe, where the meat needs to cook at least 1h30 in the pressure cooker. But all this waiting will be worth it when you put that soft, juicy shredded meat on your bread and reminisce about birthday parties from when you were a kid.

Ingredients for making Crazy Lizard Meat:
1 kilogram of lizard
4 cloves of garlic
1 cup of tomato sauce
3 cups of boiling water
½ cup of red wine
2 bay leaves
½ tablespoon of cumin
½ red pepper
How to make Crazy Lizard Meat:
Separate the ingredients. Cut the pepper into strips, chop the onion and garlic, and cut the meat into equal sizes to cook evenly.
Bring the water to a boil.
Meanwhile, season the pieces of meat with cumin and salt and pepper to taste.
Place the lidless pressure cooker on the fire and line the bottom with oil. Seal all pieces of meat on both sides and set aside. If necessary, add more oil between pieces. Take the pieces out of the pan and set aside.
Then, in the same pan, saute the onion and garlic until golden. Pour in the tomato sauce, wine and mix well, scraping the bottom of the pan for the "burnt" to bring more flavor to the dish.
Add enough boiling water to cover all the pieces of meat and finish by adding the bay leaves and pepper in strips. Mix well.
Return the pieces of meat to the pan, cover and cook for 1h40 from the time the pan beeps.
After this time, turn off the heat, wait for all the pressure to come out of the pan and check if the meat is cooked enough to shred. If so, shred all the pieces with the help of two forks.
If the meat is still not tender enough, return the meat to the pan and cook for another 10 minutes - but make sure you still have enough sauce for this. If not, top up with a little more tomato sauce and/or hot water.
Return the shredded meat to the pan without the lid and let it cook for another 10 minutes to get the taste (stir once in a while).
